We caught up with Chef Irvine
to talk inspiration, innovation,
and what he’ll be ordering next
time he’s onboard.
Chef Irvine, what was it about the
partnership with Wheels Up and
AtYourJet that made it the right
昀椀t for you?
I’ve always believed that food should match
or elevate an experience. When you think of
private aviation, it’s luxurious certainly, but
above all, it’s personal. That second part, the
personal, is something I really latched onto.
I believe cooking is personal – it’s for you, from
me. A little love letter on the plate. Meanwhile,
Wheels Up and AtYourJet weren’t looking for
a celebrity menu; they wanted a system that
actually works at altitude and delivers quality
on a consistent basis. I believed I could create
a menu that was premium, practical, and
enjoyable at 40,000 ft while also delivering
something personal and authentic to me.
That’s what made it the right 昀椀t.
